Preheat oven to 425°. Sprinkle chicken with salt and pepper.

In a 12-inch ovenproof skillet, heat oil over medium-high heat. Add chicken, skin side down; cook until browned, 3 to 4 minutes. Turn, and cook until browned, 2 to 3 minutes more. Remove chicken from skillet. Carefully drain any excess oil from skillet. Return chicken, skin side up, to skillet.

Bake until an instant-read thermometer inserted in thickest portion registers 165°, about 22 minutes. Garnish with thyme, if desired.
