Ingredients

3 tablespoons fresh lime juice
3 tablespoons soy sauce
1 tablespoon minced garlic
teaspoons ground ancho chile pepper
teaspoons ground cumin
pounds skirt steak, cut into 1-inch pieces
1 tablespoon olive oil
½ cup beef stock
1 (16-ounce) bag tortilla chips

    In a large bowl, stir together lime juice, soy sauce, garlic, chile pepper, and cumin. Add steak, tossing to coat. Cover and refrigerate for at least 30 minutes or up to 8 hours.

    Select SAUTÉ feature on Instant Pot. Add oil to pot. Remove steak from bowl, reserving marinade. Add steak to pot; cook, stirring once, until browned, 5 to 6 minutes. Add reserved marinade and stock. Cover and lock lid. Pressure cook on high for 8 minutes. Natural release pressure for 8 minutes. Carefully release remaining pressure. Remove meat using a slotted spoon, and transfer to a bowl. Cover and keep warm.

    Select SAUTÉ feature on Instant Pot. Cook cooking liquid, stirring frequently, until slightly thickened, 6 to 8 minutes. Return meat to pot, and stir with sauce to coat and rewarm, about 1 minute. Serve meat over tortilla chips with desired toppings.
